紅棗酸奶的開發(fā)與研究 PAGE PAGE 11 摘 要 本文研究棗的生理功能、藥理作用、保健作用、臨床應用及其其他用途,也介紹了乳酸菌的營養(yǎng)保健功能.最后闡述了以紅棗為主要原料、研制具有雙重保健功能、特殊口味紅棗酸奶的過程,將紅棗汁與適量奶粉混合,將嗜熱鏈球菌及保加利亞乳酸桿菌以1∶1的質量比混合作為發(fā)酵劑,進行乳酸發(fā)酵。以正交試驗得出最佳的配料組合,并得出了最佳配方及發(fā)酵條件為:以鮮奶為基數(shù),棗汁10%、白砂糖7%、奶粉2%、接種量3%,在42℃下發(fā)酵3.5-4小時,而后置于0℃-4℃的冰箱中冷藏6小時以上,并對產品進行了前景展望。 通過紅棗酸奶的開發(fā)與研究學會用理性思維發(fā)現(xiàn)問題、處理問題和解決問題,達到此研究的最終目的.這不但提高了自己的實際操作能力,也迎合了現(xiàn)代化生產的需要,馬克思主義認為凡是存在的事物必有其存在的必然性.紅棗酸奶的開發(fā)與研究都是和社會文明發(fā)展以及人們對事物的深入認識分不開的,同時也是人們改造世界的一個成果. ? 關鍵詞:紅棗 臨床應用 酸奶 加工工藝及配方 Abstract In this paper, the physiological function of date, the pharmacological effects, health care, clinical applications and other uses, but also introduced the lactic acid bacteria nutrition and health care functions.
