Tea polyphenols tea accounted for the proportion of dry matter, is one of important component. The quality of the tea is tea polyphenol content and the influence of the proportion. In this paper some of tea polyphenols concept and properties, distribution, content and quality of tea effects were reviewed in this article. Tea quality features include the appearance, color, aroma and taste, etc. And tea aroma quality formation, it is existing in the tea chemical comprehensive matching harmonious result.
