保健食品功效/標(biāo)志性成分分析

摘要：

功效/標(biāo)志性成分是保健食品特有的一類檢測(cè)項(xiàng)目,是控制產(chǎn)品質(zhì)量的一項(xiàng)重要指標(biāo),同時(shí)也是保健食品區(qū)別于普通食品的關(guān)鍵所在.每種保健食品由于原料,工藝不同,在標(biāo)準(zhǔn)中功效/標(biāo)志性成分和限度規(guī)定也不同.本文首先對(duì)保健食品中功效/標(biāo)志性成分的定義,主要成分及來源,檢驗(yàn)方法,抽檢情況進(jìn)行介紹,深入分析了功效/標(biāo)志性成分具大類成分為主,同質(zhì)化趨勢(shì),同一成分對(duì)應(yīng)多種保健功能,含量差異大和日攝入量普遍低于藥用量等特點(diǎn),最后對(duì)保健食品中功效/標(biāo)志性成分測(cè)定中存在的方法缺乏代表性和專屬性,部分產(chǎn)品的限度值制定不合理以及全國各檢驗(yàn)機(jī)構(gòu)均無檢驗(yàn)資質(zhì)等問題進(jìn)行分析和總結(jié),并提出相應(yīng)的建議和解決對(duì)策,旨在為制訂保健食品質(zhì)量標(biāo)準(zhǔn)和提高產(chǎn)品質(zhì)量提供支持.%The functional/characteristic ingredient is a unique testing item for health food. It is an important indicator to control the quality of products, and is also the key of the difference between health food and ordinary food. Each kind of health food has different standards and limits of functional/characteristic ingredients due to its raw materials and processes. This paper analyzed and summarized the definition, main ingredients and sources, testing methods and sample examination of the functional/characteristic ingredients in health food, deeply analyzed the characteristics of functional/characteristic ingredients, including major components, homogenization trend, the same component corresponding to a variety of health care functions, large differences in content and daily intake was generally lower than the amount of drugs and so on. Finally, this article analyzed and summarized the existing problems of functional/characteristic ingredients, and put forward the corresponding suggestions, in order to provide supports for the development of health food quality standards and improvement of the quality of products.
