中國(guó)傳統(tǒng)食醋營(yíng)養(yǎng)健康物質(zhì)組成研究進(jìn)展

摘要

中國(guó)傳統(tǒng)食醋有著悠久的釀造歷史,不僅風(fēng)味獨(dú)特,而且含有豐富的營(yíng)養(yǎng)健康成分,具有抗氧化、降血脂、降血糖等多種保健功效。該文對(duì)我國(guó)傳統(tǒng)食醋中的有機(jī)酸、氨基酸、多酚、川芎嗪、類黑精等主要營(yíng)養(yǎng)健康物質(zhì)及其研究進(jìn)展進(jìn)行綜述,有利于進(jìn)一步加深對(duì)我國(guó)傳統(tǒng)食醋的科學(xué)理解,同時(shí)也對(duì)保障人民營(yíng)養(yǎng)健康,提升我國(guó)傳統(tǒng)食醋國(guó)際影響力等具有重要的意義。

Abstract

Traditional Chinese vinegar has a long history, and it not only has unique flavor, but also contains rich nutrition and health ingredients. It has various health care effects such as anti-oxidation, reduce blood lipid and blood sugar. In this paper, the main nutritional health material such as organic acids, amino acids, polyphenols, ligustrazine and melanoidin in traditional Chinese vinegar and their research advances were reviewed, which was conducive to further deepen the scientific understanding of traditional vinegar in China. At the same time, it is of great significance to protect people's nutritional health, and enhance the international influence of Chinese traditional vinegar.
