PAGE IV 2013屆畢業(yè)生 畢業(yè)設(shè)計說明書 題 目: 年產(chǎn)2萬噸攪拌型酸奶生產(chǎn)線設(shè)計 院系名稱： 糧油食品學(xué)院 專業(yè)班級： 食科F0909 學(xué)生姓名： 學(xué) 號： 200848060719 指導(dǎo)教師： 教師職稱： 教授 2013年 5 月 8 日 PAGE * MERGEFORMAT III 畢 業(yè) 設(shè) 計 中 文 摘 要 摘 要 乳制品是我國食品行業(yè)首要發(fā)展的食品。隨著經(jīng)濟(jì)的發(fā)展和生活水平的提高,人們對食品的營養(yǎng)和健康越來越重視.乳及乳制品因所含豐富的對人體健康有重要作用的營養(yǎng)成分，受到了各個年齡段人的喜愛。特別是酸乳，以其顯著地保健作用及獨(dú)特的風(fēng)味，博得了消費(fèi)者的青睞。但目前我國乳制品生產(chǎn)水平及人均消費(fèi)水平遠(yuǎn)遠(yuǎn)低于西方國家，還處于起步階段。所以乳制品市場的發(fā)展?jié)摿κ志薮?，發(fā)展步伐不斷加快，發(fā)展前景十分廣闊。 本課題為年產(chǎn)2萬噸攪拌型酸奶生產(chǎn)線設(shè)計，設(shè)計以我國目前的乳品行業(yè)發(fā)展?fàn)顩r為基點(diǎn)，以食品工廠設(shè)計為要求，以節(jié)約成本為目標(biāo)，盡可能的運(yùn)用新技術(shù)，新工藝，新設(shè)備，綜合各個方面的考慮，努力設(shè)計出合理可行，效益較好的生產(chǎn)線。本課題所包含的設(shè)計有：物料流程及酸奶工藝流程的設(shè)計，物料衡算、熱量衡算及設(shè)備選型設(shè)計，車間平面布置設(shè)計，管路設(shè)計等，通過計算機(jī)CAD繪圖畫出工藝流程圖，車間設(shè)備布置圖，管路圖及各個剖面圖。 按照每年300天計算，每天2班，每班12小時，全年不停產(chǎn)的方案計算，平均每日班產(chǎn)34噸。發(fā)酵菌種為直投式，所用輔料有白砂糖、穩(wěn)定劑和果味果料等。通過工藝流程、物料衡算、熱量衡算及班產(chǎn)量確定設(shè)備型號，選擇板式換熱器作為加熱冷卻設(shè)備，殺菌設(shè)備選用UHT機(jī)，根據(jù)所用水、蒸汽等的量計算各個管路的直徑，同時對所用電量進(jìn)行估算。根據(jù)工廠設(shè)計要求，車間設(shè)計更衣室、冷藏室及辦公室等。 關(guān)鍵字： 攪拌型酸奶 車間 生產(chǎn)線 設(shè)計 畢 業(yè) 設(shè) 計 外 文 摘 要 Title A Manufacture Design of Stirred Yogurt With Production of 20 Thousand Tons Per Year Abstract Dairy products are the main development of the food industry of our country food.
